Lentil soup

Ingredients

  • 1 onion chopped
  • 2 cloves minced garlic
  • 900 ml box of chicken broth (4 cups)
  • 4 cups water (just refill the chicken broth box)
  • 1 can diced tomatoes (28oz)
  • 7 stalks celery, chopped
  • 5 carrots, chopped
  • 1/2 cup red lentils
  • 1/4 cup barley
  • 1 tsp italian seasoning
  • 2 tsp thyme
  • 2 bay leaves
  • optional
  • chicken or hot italian sausage (cooked and chopped)

Preparation

Step 1

saute onions and garlic, add all the other ingredients and simmer for 1.5 hours, until barley is cooked.

Serve hot.
