Ingredients

  • 1 lb of Sweet Italian Sausage cut into pieces
  • 4-6 russett potatoes chopped
  • 1 onion chopped
  • 1/4 C of real bacon, cooked, crumbled
  • 2 Tblsp minced garlic
  • 32 oz of chicken stock
  • 1 C spinach, chopped
  • 1 C heavy whipping cream
  • 2 Tblsp flour

Preparation

Step 1

1) Brown sausage pieces in sautee pan
2) Place sausage and chicken stock, garlic, potatoes, and onion into a slow cooker. Add just enough water to cover the vegetables and meat.
3) Cook on high 3-4 hours high (5-6hrs low) until potatoes are soft.
4) 30 min before serving, mix flour into the cream to remove lumps
5) add cream mixture, spinach, and bacon to the pot and stir.
6) Cook on high for 30min until broth thickens slightly.
7) Add salt/pepper and some cayenne to taste.
