Arethra Franklin's Shrimp FVP

Ingredients

  • 2 lbs, jumbo peeled deveined shrimp
  • 1 tsp garlic salt
  • 2 stick butter
  • 2 tomatoes, chopped
  • 8 scallions, chopped
  • 1/2 C light cream
  • Cayenne pepper
  • hot cooked rice

Preparation

Step 1

Combine shrimp and garlic salt in bowl.
Melt butter over medium heat. Add shrimp and cook about 5 minutes, stirring occasionally. Remove from heat. Add tomatoes, scallions and cream. Simmer on low 5 minutes. Meanwhile, cut shrimp into bite-sized pieces. Add to skillet and heat through. Season with cayenne pepper. Serve over rice.
