Mary's White Fruit Cake

Ingredients
- 3/4 lb. butter; melted then cooled slightly
- 6 eggs, mixed by hand
- 1 lb. sugar
- 1 box golden raisins (15 oz.)
- 2 lbs. red candied cherries
- 2 lbs. green candied cherries
- 1 lb. pecans
- 1/2 lb. walnuts
- 1 bag coconut (14 oz.)
- 2 lbs. flour
- 2 1/2 tsp. cream of tartar
- 1 tsp. baking soda
- 1 cup apple juice (may need a little more)
- 4 oz. candied pineapple; chopped
- 3 tsp. vanilla
Preparation
Step 1
Combine all dry ingredients and mix in the raisins, pecans, walnuts, coconut and pineapple; making sure all is well coated with the flour. Then add the candied cherries and be sure they are coated well with flour.
Combine the beaten eggs with the cooled butter, vanilla and apple juice. Add to the dry ingredients and mix well with your hands (plastic gloves are your best friend).
Prepare 3 loaf pans (9.25" x 5.25") with parchment paper - be sure the loaf pans are of equal weight.
Press the batter down, within the pan, so batter lays flat.
Bake in moderate oven 250 degree oven for 3 hours.
