Ingredients

  • instead of curry powder, raisins and olives, add:
  • 2 tbsp. butter
  • 1/4 cup slivered almonds
  • 3 tbs. medium unsweetened coconut
  • 1 tsp. curry powder
  • 1 1/2 cups left over rice
  • 1/4 cup golden raisins
  • 10 pitted ripe olives sliced (optional)
  • pepper and salt
  • OR
  • 1 tsp. cinnamon
  • 1/2 tsp. red pepper flakes
  • 1/2 tsp. paprika
  • 1/4 cup crasins

Preparation

Step 1

Melt butter in large frying pan on medium. Add almonds, coconut, and curry powder. Heat and stir for about 2 min until coconut is golden and mixture is fragrant.

Add remaining 5 ingredients. Cook for 3 min, stirring often, until heated through.
