Baked Zucchini

Baked Zucchini featuring slices of zucchini brushed with olive oil and garlic powder topped off with tomatoes, cheese and pepperoni. Enjoy!

  • Olive oil

  • Garlic and/or garlic powder

  • Roma tomatoes

  • Mozzarella cheese

  • Parmesan or Romano cheese

  • Salt & pepper to taste

  • Pepperoni (optional)


Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with cheese, sliced tomatoes, pepperoni, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend. Bake 375°F for 20 to 30 minutes until soft. (For larger zucchini, I scoop out centers to make boats. I saute the insides with chopped onions and return it to the boats with other ingredients. I bake the larger zucchini boats about 30 mins before I top with mozzarella cheese. Then bake 10 more mins. to melt cheese.)
