Ingredients
- 2 lb hamb
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 1 t dried basil
- 1 t parsley flakes
- 4 T butter, divided
- 3 cups chicken broth
- 4 cups diced potatoes
- 1/4 cup flour
- 2 cups diced velveta
- 1 1/2 cups milk
- 3/4 t salt
- 1/2 t pepper
- 1/4 cup sour cream
Preparation
Step 1
Brown beef and set aside, In same pan saute onion, carrots, celery, basil and parsley in t T butter. Add broth, potatoes, and beef and bring to a boil. Reduce heat,cover and simmer until potatoes are tender. In a small skillet melt remaining butter, add flour and cook until bubbly. Add to soup and bring to a boil. Cook until hot on low then add cheese, milk salt, and pepper. Cook and until cheese melts. Remove from heat and add sour cream.
