Ingredients
- 2/3 cup shelled, unsalted pecans
- 1/2 tsp. sweet/mild paprika
- 1/4 tsp. garlic powder
- 1/4 tsp. salt
- 1/4 tsp. dried thyme
- 1/8 tsp. freshly ground black pepper
- 1/8 tsp. cayenne pepper
- 1 1/4 lbs. Tilapia fillets
- 1 Tbsp. olive oil
Preparation
Step 1
preheat oven to 375. pulse the nuts in a food processor to the consistency of very small pebbles--but not as fine as sand.
transfer to a shallow bowl or plate. add the paprika, garlic, thyme, salt, pepper and cayenne pepper; stir to incorporate.
Press both sides of each fish fillet into the pecan mixture.
Heat the oil in a large, ovenproof, nonstick skillet over med heat. Once the oil shimmers, add the fish and cook until the underside is browned--about 3 minutes. turn over; cook until the second sides are browned, about 3 minutes.
transfer the skillet to the oven; bake, (middle rack) until the fish flakes easily with a fork--about 3 minutes. serve warm.
