Coconut Jam Tarts

my grandmother's recipe....delicious!

Ingredients

  • 3/4 cup butter, room temperature
  • 3/4 cup white sugar
  • 3 eggs
  • 1 1/2 cup coconut
  • 1 1/2 tsp vanilla
  • mini frozen tart shells, thawed
  • jam, any flavor

Preparation

Step 1

preheat oven to 400 degrees.

cream together butter and sugar. stir in eggs, coconut and vanilla. Fill shells with 1 TBSP of jam. Put 1 tsp of coconut mixture on top of jam and spread to edge of crust. Bake until brown.
