Tips
This could easily be cut in half and baked in an 8x8 pan. I made the entire recipe and ended up giving most of it away to keep myself from eating the entire thing!
Ingredients
- FOR THE FILLING
- 10 apples. peeled, cored and thinly sliced
- 1 cup sugar
- 1 1/4 cup water
- 1 tsp cinnamon
- 2 Tbs cornstarch
- FOR THE CRUST
- 2 cup flour
- 1 tsp salt
- 1/2 tsp baking powder
- 3/4 cup margarine
- 2 egg yolk
- 1/2 cup water
- 1 Tbs lemon juice
- FOR THE ICING
- 1 1/2 cup powdered sugar
- 3 Tbs lemon juice
- dash salt
- Servings: 18
Preparation
Step 1
1. Preheat oven to 425F. In a saucepan, combine sugar 1 cup water and cinnamon with apples and cook over medium heat for 10 minutes. Stir gently occasionally. Thin Cornstarch with 1/4 cup water. Gently stir into the hot apple mixture and cook 5 minutes longer. Remove from heat and set aside to cool. In a large bowl, combine flour salt and baking powder. Cut margarine into flour. Add egg yolks, 1/2 cup water and lemon juice. Knead dough with hands till dough becomes smooth and shiny and forms a ball. Divide dough in half. Roll out half to fit bottom of a 9x13 inch pan. Place dough flat in the bottom of the pan. Spoon in Apple filling. Roll second half of the dough to fit the pan and place on top of the filling. Bake in a 425 degree oven for 20-30 minutes until crust is brown on top. Combine powdered sugar salt and enough lemon juice to give the mixture a spreading consistence. Spread on top of crust. Cut into squares and serve. Makes 18 squares.
