Ingredients
- 1 lb red potatoes,cut into quarters
- 1 cup baby carrots
- 1 3-4lb beef roast
- 1/4 cup dijon mustard
- 2 tsp dried rosemary, crushed
- 1 tsp garlic salt
- 1/2 tsp dried thyme
- 1/2 tsp pepper
- 1/3 cup chopped onion
- 1 1/2 cups beef broth
Preparation
Step 1
place potatoes and carrots in 5 qt slow cooker. In a small bowl combine mustard, rosemary, salt, thyme and pepper...combine and rub all over roast. Add roast to slow cooker. Top with onions. Pour beef broth over vegetables. Cover and cook on low for 6-8 hours. Remove meat and thicken juices with cornstarch / flour and water.
