Sweet Potato Casserole

Ingredients

  • Filling:
  • 3 cups mashed sweet potatoes (3-4 large, baked)
  • 1/2 cup milk
  • 1/2 cup brown sugar, packed
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup mini marshmallows
  • Topping:
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar, packed
  • 4 tablespoons unsalted butter, melted
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows

Preparation

Step 1

1. Preheat oven to 350° F and butter a 2 quart baking dish.
2. Blend together the butter, mashed sweet potatoes, milk, vanilla, salt, eggs, and marshmallows in a large bowl. Transfer to the prepared baking dish.
3. For the topping: Combine the flour, brown sugar, butter and salt in a medium bowl until moist and mixture clumps together. Spread over the top of the sweet potatoes in an even layer. Top with marshmallows.
4. Bake until mostly set in the center and golden brown on top (25-30 minutes)

To bake the potatoes: Pierce potatoes several times with a fork. Place in cold oven on center rack. Turn on oven to 325° F for 1 - 1 1/2 hours, until very soft in the center. Allow to cool, then peel.
