Asian Turkey Lettuce cups

Ingredients

  • 1 head bib lettuce, washed and dried.
  • 1 lb ground turkey
  • 2-3 Tbls. oil
  • 1/2 med white onion
  • 3-4 garlic cloves
  • 2 Tbls grated ginger
  • 1/2 tsp red chili flakes
  • small can water chestnuts, chopped
  • 10 snow peas, cut in thirds
  • 3 Tbls soy sauce
  • 3 Tbls seasoned rice vinegar
  • 1/4 cup hoisin
  • 2 tsp sesame oil
  • 1 Tbls peanut butter
  • 2-3 scallions
  • 1-2 finely shredded carrot
  • sesame seeds
  • peanuts, chopped

Preparation

Step 1

Carefully separate lettuce leaves and set aside.
Brown turkey meat in 2 Tbls oil. Remove from pan. Heat up additional Tbls oil. Saute onions, garlic and ginger till onions start to soften. Add water chestnuts, soy sauce, vinegar, hoisin and sesame oil. Mix well and let the mixture start to get bubbly. Add peanut butter, melt into sauce and mix thoroughly. Return turkey to pan and heat through. Garnish on top with carrots, snow peas, chopped scallions, sesame seeds and/or peanuts. Serve in lettuce cups. Wrap and eat!
