Ingredients
- carcass of chicken or turkey
- 1 large onion quartere
- 2 carrots cut into pieces
- 2 stalks celery cut into pieces
- 2 garlic cloves peeled
- 5 qts cold water
- 2 bay leaves
- fresh thyme, parsley
- peppercorns
Preparation
Step 1
put first 7 ingredients in large stockpot and make sure the chicken is covered by 1 inch.
cook on high till boils, then turn to low. cook on low for 3 hours uncovered
last 30 minutes add other 3 ingredients
strain stock and discard solids.
store in frig up to 4 days or in freezer up to 3 months
