Ingredients
- 1 turkey carcass, with meat on
- 4 quarts of water
- 4 large carrots, diced
- 2 stalks celery, diced
- 1 large onion, diced
- 1 (28 oz) can San marzano tomato's, chopped no sauce
- 1/2 cup uncooked barley OR cooked orzo
- 1 1/2 tsp salt
- 1 tsp dried parsley
- 1 tsp dried basil
- 1 bay leaf
- 1/4 tsp cracked black pepper
- 1/2 tsp paprika
- 1/2 tsp Montreal chicken seasoning
- 1 pinch dried tyme
Preparation
Step 1
-Place turkey carcass into a large pot and pour in water, bring to a boil and reduce heat to simmer. Cook the turkey frame until the remains fall of the bone, about 1 hour. Remove the Turkey carcass and chop the remaining meat.
-Strain the broth thru a fine mesh strainer into a clean soup pot. add the chopped turkey to the strained broth, bring to a boil, reduce heat and stir in all remaining ingredients. Simmer until the vegetables are tender, about an hour. Remove bay leaf before serving. yum!
