King Ranch Cauliflower Casserole - S

Ingredients

  • 1 ) head Cauliflower - roasted or 20 oz bag froz. Cauliflower
  • 1 c. Chicken broth
  • 8 oz Cream Cheese - softened
  • 1 ) 10 oz can Rotel tomatoes
  • 2 c. Chicken - cooked & diced
  • 1/2 tsp mineral salt
  • 1/2 tsp garlic powder
  • 1/8 tsp black pepper
  • 8 oz shredded Cheddar Cheese - mild or sharp
  • Optional ingredients: bacon pieces &/or jalapeños

Preparation

Step 1

Preheat oven to 350 degrees
roast fresh Cauliflower florets - 375^ 30 minutes
While roasting cauliflower, put chicken broth & cream cheese in saucepan & heat on low til cheese is melted-whisk. Add tomatoes, chicken, salt, garlic, pepper - stir well. Add cheddar cheese and mix well.
Fold into a 13 x 9 baking dish and bake uncovered til creamy golden brown, approx 30-40 minutes.
Enjoy with a side salad.
