Mother's Ham Croquettas - from Nena

For 24, or in my case, one (if I'm hungry).

These are so much better that what Oasis has, and from what I remember, absolutely delicious.

Ingredients

  • Get:
  • 1/2 cup butter
  • 1/2 cup flour
  • 1 can evaporated milk
  • Salt & pepper
  • 1 cup ground chicken or ham (not too fine)

Preparation

Step 1

A. Melt butter. Add flour and mix very well. Add milk slowly - so there are no lumps. Continue stirring milk until it is thick (about 15-20 minutes). Flour must dissolve. (If it is too lumpy, put it in the blender), When it is thick, add ham, stir in once and take out of fire. Put mixture in a container and chill for approximately 2-3 hours until thick.


B. Get two plates - 1 plate with 2 slightly beaten eggs, the other plate with bread crumbs.
Form croquettas with your hands, then roll in bread crumbs. Dip thoroughly in egg plate, and repeat to bread crumbs plate. Let stand for 10 minutes and deep fry.
