Ingredients

  • 1/2 cup light mayonnaise
  • 1 shallot, peeled and chopped
  • 1 1/2 tsp Dijon mustard
  • 1 tsp chopped garlic
  • 1 chipotle pepper in adobo sauce, chopped
  • 1 tbs chopped fresh cilantro
  • 6 (8 oz) flour tortillas
  • 2 cups diced cooked chicken
  • 1 avocado, halved, pitted and diced
  • 6 slices cooked turkey bacon, crumbled
  • 2 hard-boiled eggs, peeled and chopped
  • 1 lg tomato, sliced
  • 3 cups shredded lettuce

Step 1

1.) In bowl, combine mayonnaise, shallots, mustard, garlic, chipotle and cilantro. Season with salt and ground black pepper, if desired.

2.) Spread 1 side of tortillas with 2 tbsp mayonnaise mixture.

3.) Layer chicken, avocados, bacon, eggs, tomatoes and lettuce on tortillas. Roll up and cut in half.
