Ingredients
- 1 pound small button mushrooms
- 1/4 cup olive oil (divided)
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 medium onion, minced
- 1/2 cup white wine, such as Pinot Grigio
- 1 tablespoon lemon juice
- 1/4 teaspoon chili flakes
- 2 tablespoons chopped parsley
- Salt and pepper
Preparation
Step 1
Brush the mushrooms clean. Keep mushrooms whole or, if they are large, cut them in half.
Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil and butter. When pan is heated, add mushrooms. Cook mushrooms until they start to brown, about 5 minutes.
Add remaining 2 tablespoons olive oil and then add onion and garlic and cook until translucent, about 5 minutes. Add wine, lemon juice and chili flakes. Cook about 10 minutes or until liquid reduces down a bit. Add chopped parsley and season to taste with salt and pepper. Serve warm.
