- 2 tbsp. extravirgin olive oil
- 1/2 sweet onion, diced
- 1 lb. frozen corn
- 1/2 cup sour cream
- 2 tbsp. lime juice
- 1 chipotle pepper in adobo sauce, seeded and minced
- 2 tbsp. adobo sauce
- 2 green onions, chopped
- 1/4 cup cilantro, chopped
- kosher salt to taste
- freshly ground black pepper to taste
In a large saucepan, heat the olive oil over medium-high heat. Saute onion slices until tender; add frozen corn. Saute until cooked through, about 15 minutes.
Meanwhile, combine sour cream, lime juice, minced chipotle, adobo sauce, chopped green onions, and chopped cilantro. Add the sour cream mixture to saucepan and combine. Season with salt and pepper.
