Chocolate Mixed Nut Pie

Ingredients

  • Pie Crust
  • 3 eggs, slightly beaten
  • 1 c light corn syrup
  • 2/3 c packed dark brown sugar
  • 1/3 c butter, melted
  • 1 t instant espresso coffee powder
  • 1-1/4 c dry-roasted nuts, coarsely chopped
  • 3 oz. sweet style Mexican (Ibarra or Tara) or bittersweet chocolate, chopped
  • Cinnamon ice cream

Preparation

Step 1

Preheat oven to 350. In a medium bowl, whisk together eggs, corn syrup, brown sugar, butter and espresso powder until combined. Stir in nuts and chocolate. Place pie shell in oven and pour in mixture. Cover edges of pie crust. Bake 25 minutes, remove cover from edge of pie. Bake another 20-25 minutes until knife in center comes out clean. Cool on wire rack. Cover, chill within 2 hours. Serve with ice cream.
