Fritters: Shrimp and Corn

Ingredients

  • 4 lb. shrimp, peeled and deveined, tails removed
  • 1 teaspoons cumin powder
  • 2 tablespoons chopped garlic
  • 2 tablespoons chopped shallots
  • 1 tablespoon minced, ginger
  • 1/2 tablespoon vegetable oil
  • 1 1/2 cups chopped green onions
  • 2/3 cups chopped carrots
  • 2/3 cups chopped celery
  • 2 cups corn
  • 2 cups macadamia nuts, toasted and roughly chopped
  • 1 tablespoon salt
  • 1/4 teaspoon chili flakes

Preparation

Step 1

Puree 1 pound of shrimp with all ingredients except corn and macadamia nuts in food processor. Add remaining of shrimp and pulse until roughly chopped. Transfer to large bowl and add corn and nuts mixing well by hand. Scoop onto sheet pan in 2-3 oz. balls.

Flatten each fritter into a thick 2 1/2" patty. In vegetable on medium hot pan cook about 1-2 minutes on each side until golden and center is firm.
