Ingredients

  • 2 cups Ocean Spray Fresh or frozen Cranberries, coarsely chopped
  • 1/2 cup chopped nuts
  • 1 TBLSP grated orange peel - I use about 3 TBLSPs
  • 2 cups all purpose flour
  • 1 cup sugar
  • 1 1/2 tsps baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 TBLSPs shortening
  • 3/4 cup orange juice
  • 1 egg well beaten

Preparation

Step 1

1) Preheat oven to 350 degrees.
2) Generously grease and lightly flour a 9X5X3 loaf pan.
3) Prepare cranberries, nuts and orange peel. Set aside.
4) In a bowl mix together flour, sugar, baking powder, salt, and soda.
5) Cut in shortening.
6) Stir in orange juice, egg, and orange peel mixing just to moisten.
7) Fold in cranberries and nuts.
8) Spoon into prepared pan.
9) Bake 60 minutes or until wooden pick inserted in center comes out clean.
10) Cool on rack 15 minutes (lay on its side)
11) Remove from pan, cool completely.
12) Wrap and store overnight.
