Chocolate Pudding

Ingredients

  • 2 egg whites
  • 2/3 Cup unsweetened cocoa powder
  • 2 T corn starch
  • 2 1/4 skim milk, divided
  • 1/2 Cup sugar
  • 1/8 t salt
  • 1 t vanilla
  • Fresh stawberries, mint leaves and unsweetened cocoa powder for garnish

Preparation

Step 1

In a smal bowl, lightly beat egg whites and set aside. In a large bowl combine 2/3 cup of cocoa and cornstarch. Whish 3/4 cup of milk into misture until completely smooth.

In a large heavy sauce pan, combine remaining milk, sugar and salt, Mix well and bring to boil over high heat whisking contantly, remove pan from heat.

Whisk cocoa mixture into hot milk mixture and bring to a boil over medium high heat. Boil for 2 minutes whisking contantly and remove from heat.

Bradually whisk 1 cup of hot cocoa misture into the egg whites. Pour mixture bak into pan and cook over medium low heat for 2 minutes whisking contantly, DO NOT boil. Remove pan from heat.

Add vanilla, blend well and pour into serving dishes. Cool to room temperature, cover and chill for 1 hour garnish with berries, mint leaves and cocoa.
