HOT CRAB DIP (WITH SPANISH FLAVOURS)

Ingredients

  • 1/4 cup olive oil mayonnaise
  • 2 tbsp sour cream1/2 cup spreadable cream cheese
  • 2 tsp lemon juice
  • 1/2 cup finely grated Manchego cheese,loosely packed
  • 2 tsp lemon juice
  • 1/2 cup chopped roasted red peppers
  • 1 clove garlic, finely chopped
  • 1 green onion, chopped
  • 1/2 tsp sweet smoked paprika
  • 1 can chunk crabmeat, drained
  • Freshly ground black pepper to taste

Preparation

Step 1

Preheat oven to 350F. In a medium bowl, whisk together mayonnaise, sour cream, cream cheese and lemon juice. Stir in Manchego, roasted peppers, garlic, green onion and paprika.

Add crab to cream cheese mixture, season with pepper and gently stir, leaving some larger pieces of crab. Scrape into a 2 cup ovenproof dish; smooth top, and bake for 25 to 30 minutes or until hot.
