Buffalo Chicken Lasagna

If you read my blog you know that I am obsessed with all things Buffalo Chicken. I actually never get sick of it! I'm always on a quest for new Buffalo Chicken recipes and this is going to be one of my new favorites! I did some experimenting with the ingredients to fit my family's taste, but if it were up to me there would be blue cheese crumbles in it but my hubby doesn't like it. With Blue Cheese or without this lasagna was incredible. All of my favorites (buffalo chicken, cheese, and noodles) layered together to make a beyond delicious lasagna! If you are a big fan of Buffalo Chicken (like me) you have got to make this! Trust me, you won't be disappointed!

Ingredients

  • 2 cups cooked chopped chicken ( I used Rotisserie)
  • 12 no-bake lasagna noodles
  • 1 15-oz container ricotta cheese
  • 1 egg
  • 2 Tablespoons blue cheese dressing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 can petite diced tomatoes, drained
  • 1 cup Buffalo Sauce
  • 2 1/2 cups shredded cheese ( I used sharp Cheddar)

Preparation

Step 1

In a mixing bowl combine chicken and wing sauce. Set aside. In another bowl combine ricotta cheese, egg, dressing, garlic and onion powder. Stir well until combined. In a 9x13 baking dish spread a small amount of wing sauce in bottom of dish. Add noodles, some of the ricotta mixture, diced tomatoes and chicken. Top with some of the shredded cheese. Repeat 2 more times.


Cover dish with foil and bake at 400 degrees for 30 minutes, remove foil and cook for an additional 10 minutes uncovered or until noodles are soft and cheese is browned and bubbly. Enjoy!
