  • 1/2 cup unsalted butter (1 Stick) , at room temperature
  • 1/2 cup vegetable Oil, such as canola or sunflower
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Step 1

1. Preheat the oven to 350°F. Line baking sheets with parchment paper, or silicone mats, or grease generously with butter or cooking spray.

2. Using a mixer fitted with a paddle attachment, beat the butter in a large bowl on medium speed about 1 minute. One ingredient at a time, add the vegetable oil, granulated sugar, powdered sugar, egg, and vanilla, beating on medium speed after each addition until completely incorporated.

3. Stir in the flour, baking soda, and salt all at once, using a wooden spoon or the mixer set on low. (The dough will be soft.) Refrigerate the dough about 1 hour or freeze for 15 minutes to make it easier to handle.

4. Using a tablespoon-sized scoop, drop the dough onto the prepared sheets. They should be 2" apart. Flatten the dough evenly with your palm to 1/4". Bake for 8 to 10 minutes until the edges turn golden.
