Dark Chocolate Mousse Recipe

Ingredients

  • 1 1/3 cups of your favorite natural cocoa
  • 2/3 cup plus 1 tablespoon of sugar, divided usage
  • 4 egg yolks
  • 5 egg whites
  • 1 cup butter
  • 4 ounces of whipping cream

Preparation

Step 1

Place butter in a large bowl. Melt the butter in the microwave. Add 2/3 cup of sugar and cocoa, stir. Bring whipping cream to a boil then add to chocolate mixture. Add egg yolks, stir briskly till mixed well.

Whip egg whites and 1 tablespoon of sugar, in a medium bowl, till stiff peaks form.

Use thermometer to make sure chocolate mixture is around 110°F. Then add about half of the egg whites to the chocolate. Mix gently. Then add the rest of the egg whites and fold in gently.

Pour into serving dishes and refrigerate for several hours. Can be made the day before.
