Lasagna Soup - Instant Pot

Ingredients

  • 1 lb Italian sausage or ground beef
  • 8-10 lasagna noodles broken up
  • 1 Jar of Homemade pasta sauce (24 oz)
  • 3 Cups water or chicken broth
  • 1/2 onion chopped
  • 3 cloves garlic minced
  • 1 can diced tomatoes
  • 1 Cup shredded parmesan cheese
  • 1 Cup shredded mozzarella cheese
  • 1/2 tsp Sea salt
  • 1/2 tsp pepper
  • 1 TBSP Italian Seasoning
  • 1 TBSP olive oil

Preparation

Step 1

1.Turn the Instant Pot to Sauté and allow it to heat up. Add 2 TBSP of oil. Add onion and garlic and sauté 2-3 minutes.

2.Add ground beef or Italian sausage and brown. Drain grease.

3.Add the rest of the ingredients except for the cheese and stir.

4.Close the lid, turn the venting knob to sealing and Cook on HIGH pressure for 5 minutes. Quickly release the pressure. Add the cheese and stir. *Optional- add a spoonful of ricotta cheese when serving!
