Almond Biscotti

Ingredients

  • 2 cups sugar
  • Zest of 3 lemons
  • 3 cups flour
  • 1 T. baking powder
  • 4 eggs
  • 4 cups roasted almonts

Preparation

Step 1

Preheat to 350F. In a large bowl combine sugar and lemon zest. blend with hands. Add flour and baking powder mix with a fork. Crack eggs into dry mixture, kneed into dough. Split dough in 2 balls, place each on a parchment line baking sheet. Using hands press dough into 1/2 " rectangles ( dust hands with flour.) Press in 2 cups of almonds per sheet of dough. Bake for 15-20 minutes until golden and firm. Remove, cool for 5 minutes. Using a long, sharp, serrated knife, cut dough on a diagonal into 3/4" strips. Re-bake strips on their sides until golden and dry, about 10 minutes, cool and enjoy.
