Ingredients
- 2 tbsp olive oil
- 2 small, sliced leeks, white part only
- 1 diced red pepper
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 cup vegetable broth
- 1 , 500 gm package potato gnocchi
- 1/2 cup feta cheese, crumbled
- 2 tbsp chopped fresh parsley
Preparation
Step 1
In a large skillet, heat 2 tbsp olive oil over medium-high heat. Add 2 small, sliced leeks, white parts only and 1 diced red pepper. Season with 1/4 tsp each salt and pepper.
Saute until tender, about 8 minutes. Pour in 1/2 cup vegetable broth, stir until heated through and remove skillet from heat. Meanwhile, cook gnocchi according to package directions. Combine cooked, drained gnocchi with leek mixture and sprinkle with feta and parsley.
