Crock Pot Chicken Tikka Masala

Classic chicken tikka masala, ready when you walk in the door.

Ingredients

  • 3 lb chicken thighs, boneless, skinless
  • 1 large onion,
  • diced 4 cloves garlic, minced
  • 1/2 - 1 T fresh ginger, minced
  • 1 large can crushed tomato's
  • 1 1/2 c plain yogurt
  • 2 T olive oil
  • 2 T garam masala
  • 1 t turmeric powder
  • 1 T cumin
  • 1/2 t paprika
  • 1-2 t salt
  • 1/2 t cinnamon
  • 1/2 t ground black pepper red pepper flakes or cayenne pepper - to taste
  • 2 bay leaves
  • 1 c whole milk
  • 1/2 lemon - juiced
  • chopped parsley - for topping

Preparation

Step 1

Place everything in the bowl of crock pot & stir to combine with spatula. Make sure chicken is coated well. Add 2 bay leaves. cover & cook for 8h on low. When done, pour milk into the pot & gently stir. Let cook an additional 20 min's t thicken up. Squeeze 1/2 of lemon over the mixture, stir.
