Ingredients
- 5 eggs, separated
- 3 tablespoons of whole milk cottage cheese
- 1/4 teaspoon of lemon juice
Preparation
Step 1
Preheat oven to 300 degrees.
Chill the bowl before whipping egg whites.
Line a loaf pan with parchment paper.
Separate the eggs very carefully, there must be NO yolks in the whites.
In a bowl, mix together the egg yolks and the cottage cheese.
In the chilled bowl add the lemon juice to the egg whites and beat the whites on high speed until fluffy and form stiff peaks. (You can use a hand mixer for this.)
Very carefully fold the egg yolk mixture into the egg whites until mixed, but try not to break down the fluffiness.
Pour the mixture into the loaf pan,
Bake on the middle rack. Bake about 45 minutes until they are golden brown, the color of a hamburger bun.
Remove from the pan and cool on a rack.
Cool on a rack for at least 3 hours (they really need to dry a bit) and then freeze wrapped in parchment or paper towels and placed in ziplock bags, two or three per bag.
