Ingredients

    cups sugar

  • 1 1/3

    cups water

  • 1 1/3

    cups finely grated carrots

  • 1

    cup raisins

  • 1

    tablespoon butter

  • 1

    teaspoon cinnamon

  • 1/2

    teaspoon nutmeg

  • 1/2

    teaspoon ground clove

  • 1

    cup chopped pecans

  • 2 1/2

    cups sifted flour

  • 1/2

    teaspoon salt

  • 1

    teaspoon baking soda

  • 2

    teaspoons baking powder

Directions

1. Preheat oven to 275 degrees F. 2. In mid sized sauce pan, put sugar, water, carrots, raisins, butter and spices, bring to boil turn down and simmer five minutes. Set aside. (Some people let mixture sit for 12 hours to produce a better flavor. This is optional, but does produce a better cake.) 3. Then add the baking soda mixing to dissolve, add the flour, salt and baking powder. Lastly fold in the pecans. 4. Put the batter into two well greased loaf pans or 1 tube pan. I used a 8 1/2 x 4 x 2 1/2. 5. Bake 275 for 1 hour and 45 minutes of for 2 hours depending on the oven.
