Brussels Sprouts Salad with Maple-lemon vinaigrette

  • 1 1/2 lb Brussel sprouts, trimmed
  • 1 cup finely diced onions
  • 1/2 tsp ground ginger
  • 3 tbs olive oil
  • 1/4 cup pure maple syrup
  • 1/4 cup fresh lemon juice
  • 1 tsp Dijon mustard
  • 1/2 cup chopped walnuts, toasted
  • salt
  • pepper

Preparation

Step 1

Shred Brussel sprouts in a food processor using the slicing blade. Sweat onions and ginger in oil in a saucepan, covered, over medium heat until onions soften, 11-12 minutes. Whisk in maple syrup, lemon juice and Dijon for the vinaigrette. Toss sprouts and walnuts with vinaigrette; season with salt and pepper.
