Ingredients

  • Alternatives:
  • 1 cup chopped nuts
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup maple syrup
  • 1/3 cup canola or neutral tasting oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup rolled oats
  • 1 medium golden delicious apple, unpeeled diced into 1/4 " pieces
  • 1/2 cup dried cranberries
  • 1/2 c shredded coconut
  • 1/4 c cacoa nibbs
  • 1/2 c applesauce instead of apples
  • 1/2 c brown sugar
  • other possibilities: almond butter, chia seeds, goji berries

Preparation

Step 1

Preheat 350 degrees

toast nuts for 8 minutes. Whisk dry ingredients together. whisk wet ingredients, then add dry ingredients. Add nuts. Makes 8 1/2 c cookies, baked 25 minutes on parchment paper.
