Ingredients
- 1 lb. breakfast sausage
- 1 yellow onion, chopped
- 1 red bell pepper, chopped
- 12 eggs
- 1/2 c whole milk
- 1 T hot sauce, such as cholula
- 1/2 t kosher salt
- 1/4 t pepper
- 1-32 oz. bag frozen tater tots
- 8 oz. Colby-Jack cheese (about 2 c), divided
- Chopped fresh chives
Preparation
Step 1
Preheat oven to 350°. Heat a large skillet over medium high. Add sausage and cook, breaking it up until browned, about five minutes. Add onion and bell pepper and cook, stirring occasionally, until tender, 8 to 10 minutes.
Whisk together eggs, milk, hot sauce, salt and pepper in a large bowl. Arrange tots in an even layer in a lightly greased 3 quart baking dish. Top with one cup cheese and the sausage mixture. Pour egg mixture evenly over tots and top with remaining 1 cup cheese.
Bake until set in the middle, 50 to 55 minutes. Let stand 10 minutes before serving. Top with chives.
