Ingredients
- 1 small diced onion
- 2 Tbs. Coconut oil
- 1/2 tsp. Saffron threads
- 1 cinnamon stick
- 1 Cup Basmati Rice
- 2 Cups Vegetable or Chicken stock
- 1/2 tsp. Sea salt
- fresh pepper to taste
- 1/2 cup Raisins
- 3 Tbs. Toasted almonds or Peanuts
- 3 scallions thinly Sliced
Preparation
Step 1
Heat oil over medium heat in a sauce pan and sauté onions until soft, about 3 minutes.
Add Saffron, cinnamon and rice and stir to coat. Add broth and salt and pepper and bring it to a boil. Reduce heat to low and simmer until all of the water is absorbed, about 10-12 minutes.
Add raisins nuts and scallions and remove from the heat and allow to sit covered for 10 minutes before serving.
