Basmati Rice Pilaf with Raisins and Nuts

Ingredients

  • 1 small diced onion
  • 2 Tbs. Coconut oil
  • 1/2 tsp. Saffron threads
  • 1 cinnamon stick
  • 1 Cup Basmati Rice
  • 2 Cups Vegetable or Chicken stock
  • 1/2 tsp. Sea salt
  • fresh pepper to taste
  • 1/2 cup Raisins
  • 3 Tbs. Toasted almonds or Peanuts
  • 3 scallions thinly Sliced

Preparation

Step 1

Heat oil over medium heat in a sauce pan and sauté onions until soft, about 3 minutes.

Add Saffron, cinnamon and rice and stir to coat. Add broth and salt and pepper and bring it to a boil. Reduce heat to low and simmer until all of the water is absorbed, about 10-12 minutes.

Add raisins nuts and scallions and remove from the heat and allow to sit covered for 10 minutes before serving.
