Cherry Balsamic Vinaigrette

Good over harvest orchard chicken salad

Ingredients

  • 1/4 cup balsamic vinegar
  • 1 T sugar
  • 1 clove garlic, minced
  • 1/4 cup cherry preserves
  • 1/4 cup red wine vinegar
  • 1/4 cup canola oil
  • kosher salt
  • fresh ground plack pepper

Preparation

Step 1

1) In a small saucepan over medium heat, combine balsamic vinegar, sugar and garlic and bring to a simmer, stirring frequently to dissolve sugar.

2) Simmer the mixture, uncovered, until reduced by half (about 10 minutes.)

3) Add cherry preserves and cook for 1 minute longer.

4) Remove from heat and let cool to room temp.

5) Whish in red wine vinegar followed by canola oil.

6) Season to taste with salt and pepper. Set aside.
