Creamy Pistachio Dressing

Blending nuts and nut butters into dressing adds another level of flavor and a creamy texture. Creamy pistachio dressing is nutty, lemony and slightly sweet - the perfect complement to any greens.

Ingredients

  • 3/4 cup olive oil
  • 1/3 cup fresh lemon juice
  • 1 tablespoon honey
  • 1/2 cup unsalted pistachios
  • Salt and pepper to taste

Preparation

Step 1

Combine oil, lemon juice and honey in a food processor or high-power blender. Pulse until combined. Add pistachios and run on high until pistachios have broken down and dressing is thick. Continue to blend until smooth. Add salt and pepper.
