Creamy Pistachio Dressing

Ingredients
- 3/4 cup olive oil
- 1/3 cup fresh lemon juice
- 1 tablespoon honey
- 1/2 cup unsalted pistachios
- Salt and pepper to taste
Preparation
Step 1
Combine oil, lemon juice and honey in a food processor or high-power blender. Pulse until combined. Add pistachios and run on high until pistachios have broken down and dressing is thick. Continue to blend until smooth. Add salt and pepper.
