Acorn Squash Apple Infused Cupcakes

Ingredients

  • Preparing the squash:
  • Ingredients:
  • 1 -1 Acorn Squash
  • 2 -2 Apples, peeled, cored and sliced
  • 1 -1 tbsp butter
  • 2 -2 tbsp brown sugar
  • 1 -1 tbsp finely chopped walnuts (optional )
  • -½ tsp salt
  • -½ tsp ground cinnamon
  • Preparing the cupcakes:
  • Ingredients:
  • 4 -4 eggs, Slightly beaten
  • -¾ cup vegetable oil
  • 2 -2 cups sugar
  • 15 -15 oz of prepared squash
  • 1 -1 ¾ cup all purpose flour
  • -¼ cup corn starch
  • 1 -1 tsp of ground cinnamon
  • -½ tsp of ground nutmeg
  • 2 -2 tsp Baking powder
  • 1 -1 tsp baking soda
  • -¾ tsp salt
  • Crumble Topping:
  • Ingredients:
  • 1 -1 cup rolled oats
  • -½ cup firmly packed brown sugar
  • 1/3 -1/3 cup of all purpose flour
  • -½ tsp salt
  • 1/3 -1/3 cup of melted butter
  • Cream Cheese Frosting:
  • Ingredients:
  • 1 -1 Package (8oz) of cream cheese softened
  • 3 -3 tbsp of butter or margarine
  • 1 -1 tbsp of orange juice ( I used half a fresh orange)
  • 2 -2 tsp of vanilla extract
  • 1 -1 ½ tsp of freshly grated orange peel
  • 4 -4 cups of powdered sugar

Preparation

Step 1

Preparing the squash:

1.To remove the skin easily place the squash in boiling water and continue to boil for 15 minutes
2.Pour off the boiling water add cold water and let stand for 5 minutes
3.When cool enough to handle cut in half and remove seeds and stem
4.Then cut into wedges and peel skin off with knife
5.Then slice into about 1 inch chunks
6.Place the chucks into a microwave safe bowl with the apples and dot with pieces of butter
7.Sprinkle the brown sugar, walnuts, salt and cinnamon over top
8.Cover with plastic wrap, and poke holes for ventilation
9.Cook in microwave on high for 7 ½ minutes
10.Remove, uncover, stir re-cover and return to microwave on high for another 7 ½ minutes or until tender make approximately 15 oz
11.Allow to cool to room temperature and puree the mixture until smooth

Preparing the cupcakes:

1.Preheat oven to 350 degrees
2.Blend eggs, oil, sugar and squash in a large mixing bowl set aside
3.Stir together flour, corn starch, cinnamon, nutmeg, baking powder, baking soda, and salt in a separate bowl
4.Add dry ingredients to squash mixture and beat until well blended
5.POUR into lined muffin tins about 2/3 full
6.Add the crumble topping before baking

Crumble Topping:

1.In a mixing bowl combined oats, brown sugar, flour, and salt, mix until well blended, add melted butter stirring with a fork until mixture is crumbly
2.Sprinkle oat mixture generously on top of the cupcakes
3.Bake in preheated (350 degree )oven for 18- 25 minutes or until tooth pick inserted comes out clean
4.Let cool before frosting

Cream Cheese Frosting:

1.Beat cream cheese and butter until fluffy
2.Add remaining ingredients and beat until smooth
3.Spread over cup cakes and enjoy
