Microwave German Potato Salad

Ingredients

  • 5 Med Potatoes
  • 1 pkg...8oz bacon
  • 1 med onion
  • 2 T flour
  • 1/2 C vinegar
  • 1/2 C water
  • 1/3 C sugar
  • 1/4 t pepper

Preparation

Step 1

Peel and slice potatoes, about 5 cups. Place potatoes in 2 qt. casserole. Cover with plastic wrap. Microwave at high 10 min or until tender, stirring 3x during cooking. Remove potatoes. Cut bacon into lardons. Place in casserole, cover with paper towel. Microwave 7 to 9 min until crisp, stirring twice with 2 forks to separate.

Stir in flour. Add remaining ingredients. Microwave at high 3 min or until thickened, stirring after 2 min. Add potatoes, cover with plastic wrap. Microwave at high 4 min until heated thru, stirring after 2 min.
