Tortilla Soup

Ingredients

  • 1 L diced Tomatoes
  • 1 med Onion , diced
  • 4 cloves garlic, minced
  • 1 L chicken stock
  • 1.5 TBSP dry cilantro leaves
  • 1 TBSPlime juice
  • 2 tsp seasoning salt
  • 1/8 tsp black pepper
  • 1 tsp chili pepper flakes

Preparation

Step 1

Saute onions and garlic until soft
Add all other ingredients to stock pot and simmer 45-60 minutes.
To serve, crumble tortilla chips in bottom of bowl. Top with cubed avocado and shredded cheese. Top with sour cream.
Flavours meld better when soup sits overnight.
