Ingredients
- 2 Tbs EVOO
- 1 small onion chopped
- 1 pound asparagus, chopped 1" long
- 4 beaten egg w/1t. Sambal
- 1 cup Swiss cheese grated
- salt and freshly ground black pepper
Preparation
Step 1
Saute onion in oil. Add asparagus. Cook 6-8 min til almost tender.
Add eggs and cook until almost set. Cover with cheese and put under broiler until cheese melts
