Ingredients
- 55 g (2 oz) plain flour
- 55 g (2 oz) whole wheat flour
- Pinch of salt
- 2 eggs
- 200 ml (8 fl oz) milk
- 100 ml (4 fl oz)water
- 4 tablespoons melted butter

Preparation
Step 1
Put all the flour and salt into a bowl.
Add the eggs and some of the milk and water mixing them into the flour one at a time.
Gradually pour the rest of the milk into the mixture, whisking until everything is mixed evenly.
Add half the melted butter to the mixture and whisk is again to make the finished batter. Pour it into a measuring jug.
Brush a frying pan with melted butter and heat until it sizzles. Then pour in 2 table spoons of pancake batter.
Quickly tilt the pan from side to side so that the base of the frying pan is covered completely with a thin layer of batter.
Cook the pancake for about 1 minute, then flip it over and cook it for 10 more seconds. Slide it onto a warm plate.
