Honey Nut Stuffed French Toast

Crunchy, creamy and slightly sweet, this honey of a breakfast is perfect for celebrating special occasions --- like making it to the weekend! ;)

Ingredients

  • Preheat the oven to 350 degrees.

Preparation

Step 1

In a bowl, combine 8 oz. light cream cheese, softened, and 1/4 cup honey. Spread on four slices of thick bread (like Texas toast), and top with additional slices. In a large skillet, melt 2 tbsp. butter over medium heat. In a shallow bowl, combine 5 eggs, 2/3 cup 2% milk, 1 tsp. vanilla and 1/2 tsp. cinnamon. Put 1 1/2 cup crushed pecans in another shallow bowl or plate. Dip sandwiches in egg mixture, then press each side into pecans. Place in pan and cook until brown, about 2 minutes per side. Watch closely to prevent burning. Place sandwiches in a rectangular baking dish and bake 7 minutes, until warmed through.
