Step 1
Cut 1 pound of boneless, skinless chicken thighs into 1 1/2 inch pieces; toss with 2 Tbsp buttermilk, 1/2 tsp each chilipowder and kosher salt and 1/4 tsp garlic powder. Sprinkle with 3/4 cup cake flour; toss to coat. Fry in 1" of oil at 375F until crisp and cooked through, 8 minutes. Drain on paper towels and sprinkle with salt.
Try serving on round mini waffles, topped with hot honey.
Variation: For barbecue bites, after chicken is cooked, toss with 1/4 cup barbecue sauce mixed with 2 tsp honey while warm.
Try serving with a quick buttermilk slaw on King's Hawaiian Rolls.
