  • 1 sweet potato
  • 1 T. honey
  • 1/8 t. crushed red pepper flakes
  • Olive oil spray
  • Salt & pepper to taste

Step 1

Preheat the oven to 475 degrees.

Halve the sweet potato lengthwise; slice each half lengthwise into 4 equal sized wedges. Place the sweet potato on a sheet pan. Spray with olive oil spray and season with salt and pepper. Toss to coat, then arrange in a single layer with skin side down. Roast for 22 minutes or until lightly browned and tender when pierced with a fork.

While potato roasts, combine honey and red pepper flakes. Season with salt and pepper and set aside.

Divide the sweet potato between two plates and drizzle the hot honey over the sweet potato.
