Bacon Wrapped Figs

Sweet & salty, warm figs in crisp bacon.
A little time consuming, but worth it. Melting cheese oozes when baked.

  • 12 dried black Mission or Calimyrna figs
  • 1 1/2 cups dry red wine (375 ml)
  • 1 bay leaf
  • 6 slices bacon, cut in half crosswise
  • 4 oz cheese, such as Asiago, Manchego, or aged Cheddar, cut in 12 slivers (125 g)
  • Preparation
  • In a small saucepan, bring figs, wine, and bay leaf to a boil over medium heat. Reduce heat, cover, and simmer until figs are soft, about 20 minutes. Uncover and simmer until wine is reduced to about 1/4 cup (60 ml). Remove from heat; let cool.
  • Preheat oven to 400°F (200°C). Place bacon on a rack set in a baking dish and bake for 15 minutes. Remove bacon and drain on paper towels.
  • Carefully cut a small vertical slit in the side of each fig (reserve wine syrup). Insert a cheese sliver and mould fig into shape—stem on top. Wrap with a bacon strip, secure with a toothpick, and arrange in a shallow baking dish.
  • Bake until bacon browns, about 15-20 minutes, turning dish once to cook evenly. Transfer to a warm platter and drizzle with warm wine syrup.
