Ingredients
- 4 boneless, skinless chicken breasts
- 1 packet ranch dressing mix
- 3/4 c panko bread crumbs
- 3/4 c Parmesan cheese
- 1/2 c melted butter
Preparation
Step 1
In a medium bowl, mix ranch dressing mix, bread crumbs and Parmesan cheese. Set aside.
Preheat oven to 350º.
Clean and rinse chicken and pat dry. Cut each piece in half, lengthwise.
Melt the butter in a bowl. Dip the chicken in the butter and cover each side.
Press each side of the chicken into the breading mix.
Place in a greased baking pan. (Line the pan with aluminum foil sprayed with Pam to keep it from sticking and for easy clean up.)
I had lots of mix left over, so I sprinkled the rest over the top of the chicken. I also melted a little more butter and drizzled it over each piece.
Now kick your feet up (or clean up the mess you made) and let the chicken cook for 45 minutes.
